The Tenuta San Giorgio collection welcomes an exciting new arrival: Sottosopra, our traditional col fondo (with its lees) sparkling wine.
A wine that turns convention upside down while reinterpreting the identity of our winery with character and originality. Naturally sparkling, bottle-fermented and unfiltered, Sottosopra is crafted to express authenticity and personality through a refined balance of tradition and innovation.
Far from being a conventional blend, it is the meeting of two grape varieties that truly reflect our terroir: Glera and Manzoni Bianco, brought together in a wine that is both distinctive and unexpected.
The Vision
Our goal was to capture the authentic expression of the alluvial soils of the Grave di Papadopoli through one of Veneto’s most traditional wine styles: col fondo.
Bottle refermentation—a technique cherished by previous generations—takes center stage once again, bringing with it the natural haze created by yeast remaining in suspension. To this historic tradition, we added a contemporary twist: a blend that combines the freshness and lively immediacy of Glera with the depth and expressive complexity of Manzoni Bianco.
The result is a wine that is vibrant, authentic and full of character.

The Character of Sottosopra
Sottosopra is a lively, multifaceted wine that balances energy with elegance. Its fine, persistent bubbles enhance every sip without overpowering it.
Artisanal, vibrant and genuine, it is a versatile wine that feels equally at home at a relaxed gathering or as the centerpiece of a refined urban aperitif.
In the Glass
This bottle-fermented sparkling wine brings together the two white grape varieties that best represent our winery and its territory.
Glera offers aromas of crisp green apple, wisteria and wildflowers. Manzoni Bianco contributes structure, depth and a long mineral finish, giving the wine a broader, more textured palate. Delicate hints of freshly baked bread emerge in the background, a hallmark of bottle refermentation.
On the palate, it is vibrant, fresh and saline. Bright citrus notes are supported by lively acidity and a pronounced mineral salinity that brings length, energy and remarkable drinkability. The bubbles are fine, elegant and perfectly integrated.
